A Kind Spark

I don't know about you guys, but I have a lot of cookbooks. The collection started before I was vegan, or even vegetarian, so I have everything from The New Best Recipes and Fix it and Forget it Lightly to my new classics like Veganomicon and Ani's Raw Food Kitchen. And frankly...we live in a small space now and there just isn't room to be buying every new cookbook I want. As it is, the cookbook space is fairly messy already

And that doesn't even include those used most recently, which teeter atop the toaster oven.

Sadly, they don't get used very often lately. I've grown enough in my own cooking that I don't need them as much anymore, and I often don't have the time for following through recipes.

So new cookbooks, be warned, it takes quite a bit of scrutiny to make it into that messy pile nowadays. You've got to offer something special, really stand out, and probably have lots of colorful pictures too (I'm shallow that way). Of course a recommendation from a friend couldn't hurt either...

After sending off the winnings of my last giveaway to AutumnTao, she sent me back a lovely thank you note, and in part of it she recommended I give The Kind Diet a read. I was skeptical. First, I already know about being vegan, and a lot of the book is an explanation of the why and hows. Second, I didn't want to actually follow any diet. Third, it is written by Alicia Silverstone. Not that I have anything against her, but previous to now, I had no idea she knew anything about food. But it did focusing on cutting back sugar, something I need, and it did have pretty pictures. I wasn't convinced. Some of the recipes were so average, like Rustic Pasta, Granola, and Caesar Salad. But then there was the Seitan Polenta Casserole, Toasted Nori Burritos, and the recipe that finally won me over, the Rice Waffles with Vegetable Melange.

So I bought the book, and it isn't a diet plan (good). I read most of the first part, which was well referenced and had some facts and figures I hadn't heard before. As AutumnTao had indicated, it really did give me a bit of a spark, and made me want to get back into the kitchen and eating good whole foods. So I went ahead and made the Rice Waffles. These are not waffles made with rice flour. It is the easiest, most simple waffle recipe made with cooked brown rice. They came up nice and crispy on the outside, moist on the inside. Savory and decidedly dinner appropriate, the Vegetable "Melange" brought it all together for a really awesome meal.

I was pleased, Nick was pleased, and I am quite looking forward to the leftovers for lunch. I'm also looking forward to trying more of the book's recipes (although, I say that about every book I buy).

Yes, it is written by Alicia Silverstone, which I guess can be seen two ways. First, its great in the fact that it makes veganism more mainstream (I hear she was on Oprah the other day). On the other hand, it also makes it seem trendy. We actually have a friend who told us recently that he was going vegan "because it is trendy". Those are seriously his words. I want to think that is better than nothing but....is it? If people are just going vegan because its "cool" and they aren't educating themselves and really caring, it seems like they're more apt to go back to their old ways and make veganism seem like something that isn't worth doing, is difficult, that isn't a lifetime choice. Anyway, I bought it because of the recipes, not Alicia but....it did make me want to go watch Clueless again.

Anyway, I know I keep saying I am going to try blogging more, and I do mean it. I miss it and I have a huge backlog of lonely pictures waiting to be written about and posted. Until next time though, enjoy your cookbook stash and stay trendy!

Sugar Free Banana Bread (Giveaway)

A few months ago, I was very lucky to receive a package from NuNaturals, who make my favorite stevia. They sent me a very large variety of products, but I just wasn't ready to review them, as I had not gotten a chance to review what I found to be the most intriguing product, the baking blend.

Then this weekend, as I prepared to go visit my best friend and her new baby girl, I realized I was almost out of sugar. Wanting to bring her some banana bread, but also have some for myself, I was faced with a bit of a conundrum. I was already late, so I could go out and buy sugar and be even more late, or not make any for myself, or try and find a substitute for the sugar. At that point, the NuNaturals Baking Blend rose ceremoniously from the depths of the cabinet and shined its light down upon my kitchen.

Okay, yeah, that's a little dramatic, but I did use it. I completely substituted all the sugar in the recipe (which is the Lower Fat Banana Bread Recipe from V'con) with the baking blend. The loaf I made for my friend used the real sugar and also had chocolate chips.

The verdict? Well, the regular sugar did bake up to make a slightly prettier loaf. The batter for the stevia loaf was a tad stickier and probably could have used some more liquid. So, the top of it wasn't as smooth. But it tastes fantastic. I really couldn't tell that it wasn't made with sugar, it was very much delicious.
Once cool, it was sliced into perfectly, and was really really yummy. This substituted 1/2 cup of sugar very successfully. The only downside to the Baking Blend is that it is fairly expensive. So if you do a lot of baking and were to use it exclusively, your wallet might feel it. But if you are an occasional baker who likes to keep things as healthy as possible, you can't go wrong!

Now, the lovely people at NuNaturals sent me a lot of stevia, and while I don't have any of the baking blend to give away, I do have a 100-count box of their White Stevia Powder packets for one lucky reader!

Success?

Seriously, what makes a good brownie?  Some people like them fudgey, some like them cakey.  

Personally, if I wanted cake, I'd eat cake...with frosting.  Fudgey brownies are so moist and squishy, they don't really need frosting.  

Well, my husband and I are going to have dinner with my best friend and her husband tonight.  I am bringing dessert.  A few months ago I brought brownies that were a complete disaster.  I had to redeem myself.  

I don't claim to be a baker, so I used the Fudgey Wudgey Brownies recipe from Veganomicon.  Were they fudgey?  Yes.  Were they wudgey?  Yes.  If you are wondering what wudgey means, make the brownies and I think you'll be able to come up with a definition.

Are you a middle or end person?  I really love the corners, I think the "crust" of the brownies is by far the best part.   

I was able to get kind of solid pieces out of the sides:

If you decide to make these, I suggest making it as she directed, with the blueberries.  I made the raspberry variation, and I think the raspberries broke down to much and added too much moisture, and making the middles become brownie wudginess.  

But...these are still completely delicious.  I can't believe I almost forgot to add that.  Yes, you may want to eat them with a fork.  Yes, you may only want to eat one, because they are intensely sweet and rich.  But they have such a great combination of fruit and chocolate, along with chunks of fruit and chocolate chips...they're just yummy.  

Life is still a little crazy here, although I now officially never have to see my last "cooperating" teacher again.  I'm going on the field trip with the kids monday (she isn't going), and then I'm going to go back and spend a few days at the high school again.  Grad school will be over this week too.  

I really can't believe its all coming to an end :)  Brownies will be a perfect way to celebrate!

Baked Penne with Roasted Vegetables

First off, I am lacking an important necessity today:  water.  

My mom texted me while I was at school, so I stopped at the gym on the way home, to a.) go to the gym, and b.) take a shower.  I wasn't planning on taking a shower there.  It is difficult when you don't have a towel.  My gym used to rent towels, but they don't anymore.  The girl at the desk was so nice, she gave me a roll of paper towels, saying that she had done it before.  It wasn't perfect, and I have no idea what kind of soap/body wash I washed my sweaty hair with, but...it worked (actually, my hair looks pretty good).  

Anyway, now I am home and faced with the difficulty of making dinner without water.  Well, more making a dinner that isn't a pain in the butt to clean up without water.  I didn't quite succeed, but we will most likely have water by tomorrow, so a few things will just have to wait until then.  

On to the food, right?  Wednesdays are my night to cook, and if asked, my family always wants pasta.  When I was a vegetarian, one of my family's favorite dishes that I made was a version of this baked pasta dish from Giada on the Food Network.  With all the cheese involved in it, its not an option for me anymore.  But when I was thinking about what to make this week, I knew I wanted something easy that would make leftovers, and the baked penne popped into mind.

The recipe I used to make was modified to begin with, and obviously veganizing it makes the recipe an even further cry from the original.  So, I'll post it.  

1 box whole wheat penne pasta (the brand I buy is 12oz)
2 cups prepared pasta sauce of choice (I buy an organic store brand)

1 block extra-firm tofu (I use Nasoya, and it is 14oz)
2 tsp lemon juice
1 clove garlic
2 tbsp dried basil 
1/4 cup nutritional yeast
1/4 tsp salt
pinch of black pepper
2 tsp olive oil

2 red peppers
2 zucchini
2 yellow squash
1 yellow onion
salt & herbs/herbed salt


1.  Preheat oven to 450 degrees.  
2.  Set a pot of water to boil (I used bottled, from a big gallon jug, because of the water issue)
3.  Cut up all the vegetables into 1-inch pieces.  Place them on baking sheets (you'll probably want two, but I smash them all onto one), spray with olive oil, and sprinkle with either salt and herbs of choice, or an herbed salt.  Toss to coat (you may want to do this more than once, again, depending on how tightly packed your sheet(s) is(are).  Roast until done, turning once, about 20 minutes.  
4.  Put the pasta into the water that is hopefully boiling by now.  Cook no longer than the lowest time given on the package.
5.  Combine the tofu through olive oil in bowl (I used the baking dish I was planning on using to eliminate clean up), and squish everything together until it has reached a "ricotta-like" consistency.  
6.  When everything is done cooking, mix it all together, along with the pasta sauce, and put into a greased (I use cooking spray) 9x13 baking dish.  I saved a little bit of the ricotta to sprinkle on top.  
7.  Lower heat to 350, and bake for 25-30 minutes.

Nutrition Information:  379.3 Calories;  7.7g Total Fat;  0.9g Saturated Fat;  0.0mg Cholesterol;  55.7g Carbohydrates;  12.9g Fiber;  21.5g Protein 

The picture makes it look like a serving is pretty small, but the baking dish is really almost full to the top, so its actually a big serving.  If you wanted it to be more of a side dish, you could obviously just reduce the serving size, but I was all about a "one-dish" today.

If you're super observant, you'll notice that the tofu "ricotta" is from VWaV and/or V'con, but I figured it was necessary.  It's pretty good, although I would add some crushed red pepper next time.  

As for the clean-up situation, the only thing that is waiting until tomorrow is the baking dish, and the pot I used to cook the pasta.  Not bad, right?  Plus, I have leftovers for the next few days.  

Now, I am thrilled because we have a Superintendent's Conference Day tomorrow, which means the kids have off, but we have to go in for some all day seminar thing.  It sounds like it is going to be hideously boring, but I get to wear jeans, and I get to go in an hour later!!  Time to catch up on some sleep!

Vegan in the Cities

I had a kind of interesting weekend.  Mainly because I spent over 15 hours of it traveling.  I think what made it so interesting is that I am still feeling quite sane. 

Yesterday started pretty great.  Since I am somewhat used to getting up early now, I was up at 7, and decided to make something fun for breakfast before yoga.  

Waffles!  Chocolate Cherry White Chocolate Chip Protein Waffles, to be exact.  I know you're all saying "recipe, please?" (maybe not, but I'm pretending you are), but I have some things I want to change.  They're based off of the Brownie Waffle recipe from Veganomicon, and they're good, but they are not quite deserving of recipe sharing yet.  They will make a great portable breakfast this week though.  

After yoga, I went down to Brooklyn to have dinner with some friends.  It is only about an hour train ride to the city.  But the train that comes closest to my house runs pretty infrequently on the weekends, so I drive down to Jersey.  That is about a half hour.  Then the train itself takes about an hour and a half, counting the waiting and switching trains once.  Then, walking to the subway station, waiting for the subway, and getting to his house...another hour, easy.  I know that doesn't add up exactly to 3 and a half hours, but that was how long it took.  

Whenever I go to see this particular friend, we get Thai food.  It is my most favorite type of food.  Who doesn't love a good Thai curry?  So, first we went to Trader Joe's because I had to get a gift certificate, and then we found a little Thai place that ended up being awesome.  It was called Cafe Chili.  I didn't get any pictures, but I had the Vegetable Spring Rolls and Panang Curry.  One of our friends, who was also down this weekend, studied abroad and then lived in Thailand for quite awhile, and he was telling me how he had actually been to Panang.  I googled it, and I think he meant Penang, but close enough, right?  My husband studied abroad in Thailand too, so I've heard more than I really want to hear about the place.  Anyway, my curry was fantastic.  I have Thai food rarely, so its okay that it is one of the only time I am a member of the Perfectly Spotlessly Clean Plate Club.  I never eat white rice, but as soon as I have a bowl of curry sauce in front of me, I am using it to sop all that up.  So delicious.    

After that, we hung out for a little, and then I made the trek back to my house.  It would be so much faster to drive, but I'd much rather chill out with my music then stress about driving in the city.  Normally, a day like this would irritate me so much, but the playlist the iTunes Genius created was so awesome, that I was completely relaxed and happy the whole time.

I wanted to post this all yesterday, but I was up against this:

Moving on, today I went up to Boston with my family to see my brother and his wife, for her birthday.  After yesterday, I actually went home and bought the new(ish) Format CD, B-sides and Rarities, which is both a bunch of new songs that weren't previously released, and some demo versions of older songs.  If you aren't aware, The Format is longer together, which is very sad.  So, I've been listening to that, Ben Folds, Flight of the Conchords, and Ben Kweller.  Loveliness! 

Now, I mentioned above that Thai food is my favorite, but I rarely get to have it (I don't exactly live in a cosmopolitan area), so imagine my surprise when my not-so-adventurous mom agreed to my brother's suggestion to get Thai!  Twice in one weekend!  Plus, I'm sure I'll be having it in Hawaii this weekend too.  

I don't remember the name of this place, but it wasn't as good...but I also didn't get what I normally get...because I had it the day before!  


For an appetizer here, we had the Vegetable Triangles, which was actually curried potatoes in peas in little fried wrappers.  Pretty yummy!  

My main dish was pretty healthy, steamed veggies with tofu and peanut sauce on the side.  I didn't want to go crazy after having all that curry and rice the day before.  It was good, and the peanut sauce kept getting better as I kept eating it.


After that...oh after that.  We went to the Amsterdam Cafe for frozen yogurt.  They had chocolate and vanilla yogurt, as well as sugar free vanilla, and dairy free vanilla.  They called it "tofu frozen yogurt"...geez, way to turn people off.  Anyway, they had a list of about 30 possible mix ins.  As would be expected, this took me quite awhile.  Minty?  Cookies?  Candy?  Fruit?  Nuts?  Oh my goodness, too many decisions!  I ended up getting the dairy free vanilla with peaches and coconut.  


This was so good.  I almost wanted to move to Boston for it (they even deliver!!)....then we walked outside again and I changed my mind, haha.  It was COLD.  

Now I am back home and it is nice and warm.  

I hope everyone had fabulous weekends!  I am getting all geared up for Hawaii this coming weekend, and I am mucho excited.  We're staying on the North Shore, at Turtle Bay (in case you wanted to stalk me), which...normally I would rather stay in Waikiki or a B&B on the East Side, but my husband wanted to stay there, and now that I've seen Forgetting Sarah Marshall a bunch of times, I really want to go!  I am so looking forward to going back, I totally miss it.  

I also start classes this week, which I am not looking forward to.  My thesis class is going to be a crazy amount of work.  I can bring my computer to class though, haha, so it'll probably give me some time to catch up on blogs and other internet things, actually!  For a teacher, I'm not a very good student.   

Oh, and I wanted to set a goal for myself for this week.  I've gotten the sleep schedule under control, I've got the feeding schedule under control too.  But I definitely have not been drinking enough water.  So, my goal for this week is 4 liters a day.

The Perfect Day

Welcome to a walk through my perfect day...which is exactly what today was.  

First, you'll wake up to the radio, like always, but Jack Johnson will be playing and it will instantly put you in an excellent mood.  

Second, even though you should really get up and have breakfast, you are going to lay in bed for an hour and finish Eclipse.  

You'll finally get up and have whatever your favorite current breakfast is.  For me is was the Apple Pie Quinoa and Tempeh Bacon Hash (with spinach, for greenery), that I posted about a few days ago.  I wasn't kidding about eating the same thing for weeks!  

All the equipment you need at the gym will be free when you need it.  A girl you went to high school with who you now look better than will be chugging away on the treadmill, then lift some girly weights, and you will smugly smile to yourself (hey, I'm not perfect, its just my perfect day).  

Then, you will set off to discover heaven.  Well, at least if your idea of heaven is fantastic natural bulk food/grocery store.  A few weeks ago, my mom pulled a flyer for this place out of the paper, and I finally got myself there.  It was a bit of a drive, but worth it, completely.  Oh and on your way to this mecca, your iPod will gleefully pump out all the Jack Johnson songs you have, even though its batteries should be running out any second.  

While you are visiting heaven (also known as Nature's Pantry), your husband, who you haven't talked to in a week, will call, and...well honestly, he'll kind of distract you from reading nutrition labels and whatnot, but you're really happy he called.  

Lots of fun stuff will be acquired at Nature's Pantry:  

From the bulk food section, low-sugar pineapple rings, carob covered raisins, and wheat free fig bars!  (Not pictured is also nutritional yeast and oat groats)

With another giveaway in mind (because they're fun!), you'll pick up two bags of Soyfree, a coffee substitution made from soy, in Chai and Almond Amaretto.  Don't forget to sign for my current giveaway in the meantime!:

Other pantry foods will be picked up, some single serving packets of almond butter, wakame flakes, miso ramen noodles, Corn Thins, a Bumble Bar (which are vegan, even though they have a bee on them.  I never would have even picked them up, except I saw them on Erica's blog yesterday), and a chocolate orange Jocolat bar:

You've been looking for vegan hair gel or mousse on the internet for a week or so.  You've been using up all the leftovers in the house, waiting until you find something, because ordering hair gel online seems like a hassle.  You find Giovanni hair gel here!  It comes with a shampoo sample too!  Because it is the perfect day, you'll also pick up some bubble bath, because you've been using shower gel in the bathtub for the past month:  

While you are at the store, you might start to think that maybe this isn't the perfect day after all...because this store ALSO doesn't sell vegan carob chips.  Huh??  However, when you get home, you will chide yourself for thinking this was not the perfect day.  That is because you will immediately see a package on the table, and you will know what it is instantly!  

Orange County NY, you may want to keep vegan carob chips away from me, but the lovely Heather (of Heather eats Almond Butter) has thwarted you!!  I mentioned on her blog last week that they were no where to be found, and she had some in the mail the next day.  She also surprised me with this chocolately Raw Organic Food Bar!!  It looks awesome, full of good stuff.  When I try it, I will post my review.  Honestly, I also ripped into it immediately, but I was able to practice some self control (because one doesn't overeat to the point where they feel sick on the perfect day). 

After you relax for a little, you'll get started on dinner.  Its another day for recipe testing!!  Today I made the Vegetable Crisp.  It had eggplant, peppers, tomatoes, etc.  
  

Serves 6
Nutrition Information:  217.7g Calories;  6.7g Total Fat;  1.2g Saturated Fat;  0.0mg Cholesterol;  34.0g Carbohydrates;  6.1g Fiber;  8.2g Protein.

This was yummy!  To go with it, you'll try something else from V'con, like the Tomato-Rice Soup with Roasted Garlic and Navy Beans.  

Serves 5 (made a half-recipe)
Nutrition Information:  174.2 Calories;  2.4g Total Fat;  0.3g Saturated Fat;  0.0mg Cholesterol;  34.4g Carbohydrates;  6.6g Fiber;  6.6g Protein

While you are cooking, you will make a gigantic mess (something about dropping a baking sheet with food on it...oops), but you totally won't get upset because the Jack Johnson emanating from your laptop keeps you chill.  

Sadly, your perfect day is coming to a close.  After dinner, you'll start on your blog while you watch 'How I Met Your Mother'.  Then, your mentor teacher will call and set up you coming in later this week (which you are equally terrified and excited for).

Lastly, I mean, the perfect day couldn't end dessert-less!  Come on, seriously, you guys must know me a little better than that.  
  
Yes, that's right, Carob Peppermint ice cream.  Fruit sweetened too, so that makes it..kind of...sort of...good for you, right?   

Edited to add:  Then your mom will give you a coupon for Puffins!  

So, perfect day, no?  Relaxed, good food, awesome gym session, packages from blogger friend, food store discovery.  Yes, definitely my idea of perfect.

Recipe Tester Hero

Ready for my shortest post ever?  

My brother and I just split Guitar Hero:  World Tour for his Xbox 360, and so...we clearly have to play that for the rest of the night.  

I will come back and edit the nutrition info tomorrow (edit, I updated it!!  I told you!), but I didn't want to get too behind.

First, I did go out for lunch with my mom's friends, and my friend (who was one of my bridesmaids, and I almost ran over with my car when I dropped her off, but that's a story I don't have time for right now...oh, wait I do.  I hit the gas HARD instead of the brakes.  Oops.).  

I had pizza with a whole wheat crust, pizza sauce, artichokes, broccoli, spinach, and sun dried tomatoes.  I brought these leftovers home, but by the time I went to the grocery store, almost ran over my friend, and got home, I was hungry again, so it is all finished :)  It was really really good.  And I was glad to be able to order some awesome looking vegan food instead of a salad.    

It was funny too, I totally recognized our waiter from somewhere, and figured I had just seen him there before.  But after coming over to our table a few times he goes "Are you my gym friend?"  Haha, I have been saying hi to this guy at the gym for 2 years, and didn't know his name (he didn't know mine either).  In my defense, he wasn't wearing the a hat, like he usually does.  In fact, I actually even saw him there this morning.  Speaking of the gym this morning...I was totally there for two hours, ugh.  I had to make up for the day I missed from the snow on Wednesday.  It was a lot of lifting, chest and leg day right after one another (with a banana in between), but I'm glad I did it and didn't have another weird behind week.  I like being on schedule.  

So much for being short, right?  I can't help myself!  

I am currently recipe testing for Robin Robertson's new book Vegan on the Cheap.  I am so excited about it!  Tonight we had one of the recipes I was given along with the Chile Cornmeal Crusted Tofu from Veganomicon.  


I actually think this is the first thing I have made from V'con?  I really liked them!  I don't have kids either, but it seemed like they would be pretty kid friendly.  Kind of like chicken fingers...but with tofu. 

Serves 4 (4 triangles per person)
Nutrition Information:  142.3 Calories; 5.7g Total Fat;  0.7g Saturated Fat;  0.0mg Cholesterol;  11.3g Carbohydrates;  2.6g Fiber;  11.0g Protein.  

If you're wondering how I figured this out, because you dredge the tofu and have a lot of cornmeal mixture left over, I actually measured everything before and after.  Yep...I'm a nut like that.

This was SPICY.  I was really surprised that my mom ate it, actually.  She has zero tolerance for anything spicy.  But she was good as long as she had the orange every couple of bites.  Everyone liked it, and, seriously, it was really cheap!  I had intentions of calculating the price, but I lost my receipt.  

I know I only got 5 recipes to test, but from getting a peek at the whole list, I personally can't wait to get the book.  

Okay, so I'm being yelled at by my bandmates.  I'll be back tomorrow to update this crappy post at the very least!
