What I've Been Up To (In Pictures)

Well, first of all Happy Holidays to everyone. I hope whatever December holiday you celebrate treated you well, and that you had a great New Year's celebration! Ivan would personally like to wish you a belated Merry Christmas though.


I know I haven't been around much. Frankly, I don't have much time for cooking, let alone blogging, and I've been debating whether or not to even keep doing it. In fact, I told Nick yesterday that I was going to stop....but I don't think I can. Just expect me to be posting less frequently (although, I'm sure most of you have figured that one out by now). Anyway, this is just some pictures of what I've been up to.

This Purely Chocolate drink from Bolthouse Farms is really good. I reviewed the Vanilla Chai almost a year ago, but this might be even better: super creamy, fruit sweetened, high in protein.


Vegan Breakfast Sandwiches from Vegan Yum Yum. These took a good long time to make, since it was my first homemade biscuit experience, but they were really good. Definitely one of Nick's favorites.

After a long day out Christmas shopping, we didn't want to spend a lot of money on eating out, or spend a lot of time making dinner, but I really wanted some 'Italian food'. I've been wanting to try these for awhile, and at the time, it hit the spot.

Perhaps not authentic Italian, but I had the lasagna, and it was pretty yummy, made with a soy ricotta filling.



My pride and joy of the holidays was definitely the Peppermint Patties I had intentions of making for many friends and family. However, after a day FULL of candy making (there were chocolate caramels too), I really didn't want to see chocolate again for awhile. So, this tin went to my best friend, and once I got over my chocolate overload, my husband and I finished the rest because they were incredibly delicious. They are NOT healthy, but really awesome, and you can find the recipe here. I used brown rice syrup and doubled the mint extract.

Not pictured, I also made some peanut brittle and pecan clusters for my grandparents. I was in Christmas overload at that point, and forgot to snap a quick picture before they were gifted.

I end with the candy for a very specific reason. One of the reasons I was considering quitting the blogging was because since I started, I have gained a significant amount of weight. I don't look incredibly different, but despite working out consistently, my clothes don't fit. I feel like I have to focus more on my health than on trying to make 'blog-worthy' food. So, in the New Year, expect things to be a little healthier.

Also, expect things to be spiralized.

One of the gifts I was lucky to get this year was a spiralizer. Ivan likes the box, and I'm already loving the thing.

So, that is where I have been, and I hope to not completely drop off the radar for so long anytime soon. Enjoy the new year, eat some black eyed peas!!

Chocolate Chia in the Morning

Nick and I went for a run this morning. Man, is it getting cold out. My car was completely iced over. Upon coming home, I decided I wanted something warm. I've mainly been having boring cereal for breakfast (Special K Protein Plus, to be specific), but I had a little extra time today, so I made something that took a little more effort.

Chocolate Chia Oat Bran


Honestly, this can only be described as love in a bowl. I have tried oat bran, and I have tried chia pudding, separately. This brought them together, with a nice dollop of chocolate soynut butter, and totally made my day.

For those of you who like recipes:
What You Need:
1/2 cup oat bran
2 cups water
2 tbsp chia seeds
1/4 cup cocoa powder
1 tsp vanilla extract
1-2 Tbsp maple syrup or agave
1 Tbsp chocolate nut butter (you could use regular, but you've already got so much chocolate goodness, why stop?)
pinch of salt

What You'll Do:
On a stovetop, bring 1/2 cup water to a boil and add oat bran and salt. Cook until the bottom becomes dry, then add the rest of the water, the chia, cocoa powder, and vanilla. Mix well. Let sit for 15 minutes. Stir in sweetener, top with nut butter, and enjoy.

Serves 1 Big Bowl of Oats

I know I waffle when it comes to calculating calories, but I really love doing it. Look at all that fiber!! Also, this is a lot of food, and it might be even better with 1/3 cup of oat bran, and some frozen cherries added. Experiment!

I also suggest adding some stevia, for those of you who are not allergic to it, which I think I am. I have been getting fairly bad hives for the past few months, and I couldn't pin down what it was from. I actually went to a doctor, who put me on prednisone, and it got worse. At first I thought it was just the Vitamin Water 10, but I have now also cut it out of my morning tea, and have stopped using my protein powder that has stevia in it, and the hives have practically stopped. There's a chance it may not be the cause, but I would bet on it. This makes me sad, I am a big stevia fan, and I had used it for over a year before I started drinking the Vitamin Water in September, and the allergy started.

Sorry for the lack of postage lately. Work has got me fairly busy, and I have time to blog, but not really time to cook. I doubt you want to see what I had for dinner last night (hint: Soyatoo, Chocolate Soynut Butter, and Rice Crackers. NOT together, I'm not completely crazy). I'll try and get in here as often as possible!

Oh, and our little bug is growing, he's about 5 lbs now. He is a little monster sometimes and a little angel others. He came to work with me a few days ago, and we dressed him up in angel wings. The pictures are on my phone, I'll try and get them on here. This was him on Saturday though, with Nick.

*Sigh* He is cute. I just wish he'd stop biting my ankles!

Another Momentous Day

It was going to be so hard to top a 100th post, that I figured I would wait for another momentous day.  Luckily, one came quickly!  

Today is our third anniversary!  (Wedding anniversary, if that wasn't clear).  Its hard to believe, really, maybe because we've been apart for more than half of it.

For our first anniversary, we went to our favorite place at the time, Roy's.  This was just around my switch to vegetarianism, and I remember being really conflicted about the fish.  For some reason people seem to view fish as lesser beings, hence the increase in pescatarians, but fishies have always been some of my favorite animals, so I didn't quite get that.  I had goldfish wen I was younger and when I was in college, my husband (then boyfriend, obviously) got me two goldfish.  Once we have our own house and little more room, we hope to get a really big tank (we'll see how Zoe feels about that).  (By the way, some Roy's locations have really fantastic separate vegetarian menus.  For example, the one in Maui is fantastic.  The one in Baltimore, sucks).    

Anyway, our last anniversary he was in Iraq, so we didn't really do anything.  This year we're finally together again, there is no fishy conflict, and my husband offered to make dinner.  That's right ladies and gentlemen.  Not only has he decided to try out eating a vegan diet, but he's trying to learn to cook too.  If you knew my husband, you would probably want to call him up to confirm this because it even sounds to ME like I'm making it up.  I'm happy for him though.  

He made the Three-Bean Chili from The Vegan Table, substituting the three cans of beans we had on hand. It took every ounce of self control for me to not go over and check on him constantly, but I tried my best to relax and watch the train wreck that is Daisy of Love (did I just admit that??).

I was in charge of dessert.  This was a toughie.  If I made a cake, I'd spend the next few days stuffing my face with it.  He requested chocolate, and the same fate was true with brownies.  Yes, I want to relax and enjoy my anniversary, but I don't want it carrying over to the rest of my week and causing me grief.  I scoured the cookbooks...Vegan with a Vengeance?  Ani's Raw Food Desserts?  Veganomicon?  Vegan Express?  

I finally settled on the Chocolate Orange Pudding from Vegan Soul Kitchen.  Who doesn't like a rich chocolately pudding, right?  From there I took the easy way out and made mini chocolate pudding pies using store-bought pie crusts.  


I made the topping, and if anyone wants the "recipe" feel free to email me.  It was really easy and it went perfectly.  The only problem?  They were super good and even though I only made half a recipe of the pudding it filled five mini pie crusts.  So we both had two...but that's what anniversaries are for :)   

On Monday I mentioned an announcement, and I still have it, although it has changed a little.  Nick just found out that he has some temporary duty at Ft Lewis starting at the end of this month.  If you are unaware, Ft Lewis is in Washington state.  We are in New Jersey now.  And we are driving!  The drive out there, I think is going to be a straight shot.  One the way back though, I'm hoping to take a little bit more time and see California a little, and go through the middle of the country.  I've gone cross-country before with my family, but never to Washington, and never as a vegan.  So...if anyone has some must-see, or must-eat-at places, a suggestion for a route to take on the way back, advice, etc, let me know!!  And I mean, anywhere in the country really.  Comment or email, I want to know the best places to stop at, from random to obvious.  And, if anyone lives near Seattle, let me know, I will most likely be pretty bored!

Success?

Seriously, what makes a good brownie?  Some people like them fudgey, some like them cakey.  

Personally, if I wanted cake, I'd eat cake...with frosting.  Fudgey brownies are so moist and squishy, they don't really need frosting.  

Well, my husband and I are going to have dinner with my best friend and her husband tonight.  I am bringing dessert.  A few months ago I brought brownies that were a complete disaster.  I had to redeem myself.  

I don't claim to be a baker, so I used the Fudgey Wudgey Brownies recipe from Veganomicon.  Were they fudgey?  Yes.  Were they wudgey?  Yes.  If you are wondering what wudgey means, make the brownies and I think you'll be able to come up with a definition.

Are you a middle or end person?  I really love the corners, I think the "crust" of the brownies is by far the best part.   

I was able to get kind of solid pieces out of the sides:


However, the middle came out looking like this:


If you decide to make these, I suggest making it as she directed, with the blueberries.  I made the raspberry variation, and I think the raspberries broke down to much and added too much moisture, and making the middles become brownie wudginess.  

But...these are still completely delicious.  I can't believe I almost forgot to add that.  Yes, you may want to eat them with a fork.  Yes, you may only want to eat one, because they are intensely sweet and rich.  But they have such a great combination of fruit and chocolate, along with chunks of fruit and chocolate chips...they're just yummy.  

Life is still a little crazy here, although I now officially never have to see my last "cooperating" teacher again.  I'm going on the field trip with the kids monday (she isn't going), and then I'm going to go back and spend a few days at the high school again.  Grad school will be over this week too.  

I really can't believe its all coming to an end :)  Brownies will be a perfect way to celebrate!

Like A Kid Again

Wait.  Does this sound like your childhood?  

If so, I'm jealous.  But I did acquire a few things recently that brought me back to younger days.  

Yesterday I was lucky enough to receive a package from Matt's Munchies!  They're all natural fruit leathers (dairy free, egg free, nut free, gluten free!), which are pretty much the healthiest versions of fruit roll-ups you can come by.  How can fruit roll-ups not remind you of childhood?!  I think what set them apart in their kinship to fruit roll-ups (compared to other fruit leathers) was that they kind of have to be peeled apart like a fruit roll-up.  What makes these way better than a fruit-roll up is that they're made from either bananas, or mangoes, plus spices.  They come in six varieties:  Mango, Island Mango, Ginger Zest, Banana, Apple Pie, and Choco-Nana (Choco-Nana does have more ingredients, and some evaporated cane juice...but its worth it).  

I don't really know how to express to you that I liked them besides telling you that I got through more than half the package (there was two of each flavor) before I remembered that I really needed to take a picture. Uh...oops.  Here's what is left:

One of the things I love about these, besides them tasting great, is that I feel like there's a lot in the package.  The Mango and Ginger Spice are about 50 calories per package and the rest are closer to 70 calories...and there is at least 6 pieces in every package.  My favorite is no surprise...Choco-Nana!  

Sometimes "natural" chocolatey stuff disappoints me, but these were such a perfect chocolately treat, that I'll probably be ordering more.  I did prefer all the banana based flavors over the mango (even the Apple Pie is banana based!), but the mango varieties were still awesome.  The Ginger Spice tastes just like a warming ginger candy, and the Tropical Mango has flecks of coconut in it.  

All in all, a big thank you to Matt's Munchies for letting me sample, and reminding me of the goodness that is smushed fruit (while being admittedly better than the childhood fruit roll-up). 

Now, while I didn't get to sip any coconut milk today, I did get a new lip balm.  My next door neighbor used to sell Avon, and one year for Easter, I got this cute coconut lip balm with a bunny on it.  I loved that lip balm.  It reminds of my neighbor, it reminds me of the beach, it reminds of the time in my life (most of high school) when I perpetually smelled like coconut (body lotions, shampoo, you name it).  A few months ago I mentioned a vegan lip balm that I got randomly at a Borders in Honolulu, and how much I loved it.  Well, there was a display at my local Borders today!  Even better, the flavor that popped out at me immediately:  Coconut Milk.  I snatched that sucker up with haste.  

I know I said it in my last post about The Giving Earth lip balm, but this stuff is the best.  It is so smooth and creamy and I just completely adore it.  I don't think I've ever stuck with a lip balm for so long...at least not since my coconut bunny lip balm.  There is a website on the lip balm, but it does not bring you to any sort of product page.  Check it out, its weird.  I also can't find anything about the company online, still.  However, I did notice that some of their flavors were in different, newer packaging, so maybe if I had gotten one of them I would have gotten an updated URL on it.  And maybe that means they're expanding and you should check your Borders for them! 

I'm off to bask in the coconut goodness on my lips and enjoy some Mango Matt's Munchies!  Just like a kid again.

There's A Lot


There's a lot to talk about today.  I'll try to do it mostly through pictures.  

First though, I wasn't around and didn't do anything too special (food-wise) this weekend because I had an interview today and I was freaking out/preparing for it.  It went well, we'll see if they call back next week.  Anyone have any tips on a follow up?  Send a thank you email, a thank you note, etc?  For teaching positions you usually interview, then give a demo lesson, and the lesson is what comes next, if anything comes next.  

Anyway, food last week was good.  Nothing exciting, but I didn't have peanut butter for dinner even one night :)  

Monday I tried some of Yves' Canadian Bacon.  I have an confession....I have always loved Taylor Ham.  Even when I was in college and too lazy to cook much of anything, I would almost always buy it when I did get to the grocery store.  So, I bought this in hopes of igniting some old memories.

Verdict?  Its good!  No, it doesn't taste like Taylor Ham, but it doesn't taste like Canadian Bacon either...it does taste good though.  If you're wondering, its mainly made of wheat gluten....which means the protein is pretty high:  3 slices = 80 calories and 13g protein.  I approve.  Of course, I had to have it with some tofu scramble!  

Wednesday is the night I made dinner, and I decided to finally break out Skinny Bitch in the Kitch.  I've had it for awhile, but the only things I had ever made was the marinated tofu feta (which is awesome, by the way).  I bought some Field Roast Italian Sausages on my way home from work, and we had Roasted Sausage, Peppers, and Onions with Polenta.  This was one of the best recipes I've made from a cookbook in awhile.  The sausage was too spicy for mom, but my brother and I both really liked it. 
 

If you aren't familiar with Field Roast, they primarily make what they call "Grain Meats".  Colleen Patrick-Goudreau has mentioned them on her podcast Vegetarian Food for Thought many times, so I felt comfortable buying them and feeding them to omnivores.  Sausage is just a mess of gross meat by-product anyway, you can barely even tell it isn't meat, except it isn't gross and fatty.  

A few months ago I bought The Yoga Cookbook.  This is a lacto-vegetarian book, although most of it is vegan, and if the recipe does contain dairy, there is usually a vegan substitute suggestion. I bought it kind of on a whim, and it was purely because of one recipe that looked really good.  I don't remember its name, but its essentially sauteed fennel with white beans and curry powder, topped with the sauteed zucchini ribbons with parsley.  

I made it this past weekend, and it was pretty good, although nothing groundbreaking.  My brother and I both had it, and we were both huge fans of the butter beans!  Neither of us had ever had them before, and I was wary of these gigantic beans, but they were so soft and yummy, and my brother says, kind of like potatoes (he loves potatoes).

I have been feeling very very lazy, so I picked up this Spicy Peanut Bake coating by A Taste of Thai this past weekend after yoga.  I planned on using it for tofu.  It did not work.  I'm not sure why.  It kind of melted off.  It still tasted good, and it stuck to the top side, but it wasn't as crispy crunchy as I had hoped.  Baked tofu is good no matter what though, (50 minutes on 400 degrees is perfection) I served it with some roasted asparagus, and some brown rice.


I'm so happy I have some brown rice.  This probably sound gross, but I love having leftover brown rice, because I heat it up and mix it with hummus.  Good?  YES.  Okay, it is a little weird, actually, but I still really like it.  I forced some down before my interview today because I didn't want my belly rumbling.

Wait wait, I'm not done.  Product time.  I have some fun stuff this week.  

First, perfect pasta.  I kid you not, this is a ridiculous product.  Same calories as regular serving of pasta (200 calories), but 23 grams of protein.  23 GRAMS OF PROTEIN?  

It is made from non-GMO soybeans, so its gluten free, and it tastes really good, actually.  It has a bit of a chewy bite to it, and I would recommend a more Asian type noodle dish, rather than an Italian pasta dish, but its really good.  I had a half serving (which is pretty large), with the leftovers of the White beans etc etc.

I also got to try the Chocolate Coconut Raw Organic bar.



If the package looks like its empty...it totally is.  Hi, um, this is awesome.  Actually, it probably ties with the Chocolatey Chip Raw Organic bar, which I've talked about before.  I'd say this one is perfect to have instead of a candy bar really.  I had it at the movies.  I'd mainly consider this a superfluous snack back because the protein in this bar is lower, 230 calories and 5g protein.  It is soo very good though.  

I got some other fun stuff today.  For some reason, even though the interview went well, I was feeling kind of down afterwards.  I think because I have to wait to hear back from them until next week.  That's a long time to wait.  So, I went to Whole Foods.  First off, I'm not a big Whole Foods fan.  I much prefer my less commercial health food stores, mainly because I think they cater much more to vegetarians and vegans.  Whole Foods is just all about happy food.  And they don't want to upset their customers who want their happy food, by providing options that may make them think about their meat.  I just don't really agree with their philosophy.  Granted, I'd rather have people buying organic produce, but this Whole Foods, especially, I believe others are different...they didn't even really have any tofu options at their salad bar (there was one, an ugly tofu "egg" salad).  This is very lame.  I ended up getting some soup, which was good.  

Everything else I ended up getting was kind of...well, not the healthiest.  That was all I wanted.  I *did* talk myself into putting down the vegan donut holes (yes, there was a small section of vegan cookies/donuts/scones, etc), but I don't think I bought anything really good for you.  Okay, so a lot of it was dried fruit, but...you should know me by now, I try to focus more on protein products, sugary fruit doesn't exactly cut it as "healthy food" for me.    

Sweetriot, I don't know if you are familiar with this company, but they rock.  They feature local artists on their packaging, they use recyclable reusable material, and their cacao and cocoa is fair trade from Latin America.  

I bought an unBar (it stands for "unofficial bar of the world, according to their website...weird), but its already been consumed.  It was delicious.  Mine had 70% dark chocolate, with crunchy bits of cacao nibs, and a plump raisin in each bite.  


Really yummy, and only 180 calories for what felt like a pretty big chunk of chocolate.  

I also bought what seems to be their signature product, dark chocolate covered cacao nibs in flavor 65 (meaning 65% dark chocolate, they also have flavor 5o and flavor 70).  These containers are so cool.  The artwork is really awesome, and even if you go crazy, the whole tin is only 140 calories, making each "peace" only 1-2 calories.

  

They're totally yummy.  Perfect when you just need a chocolate fix, not a whole bar.

I also bought some Chili-Lime flavored mango...YUM.  And its raw!  

I don't think there is anything better than dried mango.  It is by far my most favorite dried fruit.  And flavored?  It really just doesn't get better.  

I did get some bulk oat bran, and some pistachios, so that wasn't too bad.  Then I also got some dried cherries because I love them, and I was feeling disappointed.  

Hopefully I have no reason to be disappointed, but I can tell you that if I don't get called back, I'll be opening this bag.  


Ike & Sam's Kickin' Cayenne Kettle Corn.  For some reason, I know some people don't like kettle corn, and if you are one of those people...I think you're crazy.  But then, I (obviously) love sweet things.    
This stuff is totally fantastic.  It is a pretty sweet snack, but its got the perfect spicy kick that lingers on your lips.  

Last, I am so excited about this:  Cinnamon Sugar Soynut Butter.


Whenever I see soynut butter, I'm surprised that it doesn't have more protein.  Well, this was more what I expected:  200 calories and 10g of protein.  Its pretty yummy too.  It doesn't have whatever kind of addictive drug they put in peanut butter.  Plus, its a small jar, so I'll eat it slower (yes, I play mind games with myself).      

So, like I said, I know its a lot, but I don't think any of it was too difficult to digest (haha, food blog pun).  Who knows if I'll have anything else to post this week.  So far the plan is fairly loose, so who knows.

Monster Hash

So the color makes this more appropriate for St. Patrick’s Day, the title more appropriate for Halloween, but I figure it is irrelevant since I didn’t get to post this on Valentine’s Day anyway, right?  


My brother loves anything with potatoes, and I’ve had some pretty Austrian Fingerlings sitting in the crisper for the past few weeks, so I decided to make him some hash browns for breakfast, since it was Valentine’s Day, and I was being nice.  Of course, I couldn’t just make hash browns.  I mean...just pure potatoes?  Not healthy enough.  So I made Broccoli-Potato Hash Browns, using my food processor to grate the potatoes and broccoli, which worked so incredibly well, it made my day.



We had it with my Tempeh Bacon Hash, which I posted a loose recipe for a few weeks ago, but I figured I would post it more officially here, since it has become one of my favorites.  


Double Hash for 2

Broccoli-Potato Hash Browns

2 cups potatoes, grated

2 cups broccoli, cooked until slightly crisp, and grated 

salt and pepper to taste


1.  Press it an oiled pan and cook until browned on one side, and flip (I do this in pieces, I don’t flip the whole thing).  

2.  Cook on the other side.  I tend to flip it a few times until it is cooked through.  


Tempeh Bacon Hash

1 package tempeh (8oz), crumbled

4 tsp Bragg’s/tamari/soy sauce

4 tsp agave nectar (honey can sub for this if you aren’t vegan)

4 tbsp ketchup

4 tbsp water

liquid smoke to taste, about 1/8 tsp


1. Mix together the crumbled tempeh with all the other ingredients, let marinate while you do something else (like cook the broccoli-potato hash, or whatever else you might be making with it).

2.  Spread in an oiled pan, cooking until it gets kind of golden-brown, and then you want to keep turning it until it is slightly crispy and golden all over.


Totally easy; minimal, simple ingredients, and best eaten all mixed together.

Serves 2*

Nutrition Information:  465.4 Calories;  12.7g Total Protein;  2.6g Saturated Fat;  0.0mg Cholesterol;  66.4g Carbohydrates;  7.8g Fiber;  29.9g Protein.  


*This could probably serve 3 or 4 people, but for my brother and I it was appropriate, I like a big breakfast.   


Besides breakfast, I did spend the rest of my Valentine’s Day with my brother.  We went on a little road trip to good old Pennsylvania.  He wanted to go to Sonic.  I was not thrilled with this idea, but I did a Happy Cow search for stuff nearby, and found that Vegan Treats Bakery was only a few short miles away.  So off we went.  


Two hours later, we had our very first Sonic experience.  Of course, there wasn’t really anything for me to eat there, but I did get a limeade!  Their drinks were always what intrigued me anyway.  My brother got some kind of bacon burger on texas toast, which he said was good.  My limeade (diet limeade, actually) was really good.  And, we went during “Happy Hour”, so it was only $0.90.

Next, we headed over to Vegan Treats, who have been featured in VegNews a number of times.  My brother was already stuffed, but he was a good sport and had a giant cookie.  I also got a giant cookie for my dad, a cupcake for my mom, and some carrot cake and a mini vegan Oreo cheesecake for myself.  


Yes, two cakes for me.  I ate the carrot cake right in the car, haha.  I forgot a fork, so...hands it was, right out of the box.  No, it was not a pretty sight (ask my brother)...but it was delicious.  Actually, the cake was delicious, the frosting wasn’t cream cheesey enough for me.  I could tell just by looking at it that it was too white, but the cake part was worth it.  


The only problem with this little adventure is that I haven’t been eating a lot of sugar lately.  By cutting out eating sugar after 8, I haven’t really been eating any sugar besides some carob raisins here and there.  So, this carrot cake went straight to me head and I had a headache in about 20 minutes.  


I still had to taste the Oreo cheesecake when I got home though.  You can see it has a kind of Oreo mousse on top...that was fantastic.  The cheesecake itself didn’t really taste like much, which was disappointing.  I actually liked the cheesecake we made for Thanksgiving more than this one.  Maybe they have yet to discover Tofutti?  I mean, I don’t think it is hard to mimic the cream cheese flavor, which I clearly love since both things I bought were (or should have been) cream cheesey.  Oh, and I can tell you that the cookies my dad and brother had were delicious, because I had a taste of my brother’s, and my mom said the cupcake was good.  So, my suggestion is to just avoid the cheesecake.  Not that it is bad, it just isn’t worth the calories, in my opinion.  They have soft serve soy ice cream and doughnuts too.


I was greeted with a nice surprise when I got home too.  Up until now, it was looking like my brother was going to my Valentine this year, and...not that I don’t love him but...well that’s kind of weird.  But I came home to find a Valentine’s Day surprise.  



This pictures isn’t very good, but on the bottom right is an orange and red rose.  I’m sure you’ve seen them, its kind of mixed, and it is my favorite.  There were a few of them, but you can only see one in this picture.  


I also got a turtle in a can.  I mentioned in my posts about my trip to Hawaii that my husband and I are really fond of the turtles, and we would go and visit them often.  So, he sent me a turtle in a can.  Like, I used a can opener to open it, and this little guy popped out.  


He is so cute, although Zoe is a little wary.  


Oh, I also wanted to follow up on the Chilies & Cherries ChocoLove bar.  It was possibly the best piece of chocolate I have ever had.  I’m not really a huge chocolate person, but I ate the whole thing.  I will usually only have a piece or two at a time (I mean like, a square at a time), but I happily ate the whole thing.  Yes, before the 8 PM sugar cutoff (not hard when you go to bed at 9:30).        


Speaking of 9:30, it is rapidly approaching bedtime.  I did want to mention quickly that we went to see Coraline today, and it was...weird.  The 3D was cool, although you kind of forgot about it after a few minutes.  But the movie was just...weird.  I can't really recommend or NOT recommend it, it was just...weird.  Although, I went into it having no clue what it was about, so that may have affected my opinion.  I think I may have liked it more if I had an idea of what it was about beforehand...so check it out before you see it!


I am doing a raw day tomorrow, plus more running and more yoga, and I'm so excited for it.  I hope everyone is having a good weekend!

Just Because Its Vegan..

I have a confession to make.  Since becoming vegan, I have put on a little bit of weight.  I think.  Maybe.  Honestly, I don't really know how much I weighed when I started, but I don't feel awesome right now.  

Luckily, I guess, I am completely aware of why this has happened.  Prior to becoming vegan, the last thing I would have spent my free time doing was baking.  Cooking, yes, baking, no.  

I have been forced to face the fact that, just because its vegan, doesn't mean it is good for you.  I think I just get all excited to find some new vegan thing, or try some vegan cookie recipe to see how it compares, and feel like its "good" just because it is animal-free.  Vegan doesn't have to equal healthy.  I know how to eat better than I am, and I should be.  So, I am saying farewell to baking for awhile.  This also involves not eating sugar after 8 because I have a hard time falling asleep when I do.

Well, if you know the song, that may be a little overly dramatic, but you get the point.    

I have to add one other thing to this cutback.  Peanut butter.  I think I just ate half a jar.  I don't care if its good fat...too much of a good thing does exist.  

Just to be clear, I'm not giving up any and all sugar, just going on a baking hiatus, and not eating sugar after 8.  I'm not even giving up baked goods made elsewhere, I am taking a break from making a batch of cookies, and then eating them all because they're there.  This has actually been going on for a week or so, and its going pretty well.  

Does everyone have a three day weekend?  Most of the schools around me have a winter break, but we don't.  I'm actually pretty happy about it, because it means I get to spend more time at this school.  I went to my first student teaching seminar today, and after listening to some other people talk, I think that I got really lucky, and I'm not looking forward to leaving.  

I hope to get some kind of cooking done on my day off...at the very least, I need to actually buy some food.  My refrigerator is eerily empty...I think I can hear an echo in there!
