Best Month Ever

If you aren't aware yet, I am here to let you know that March is the best month ever.  If you are wondering why, I am kind of upset that no one took the time to stalk me and figure out when my birthday is.  


Okay, I'm not really upset (thank you, for not stalking me, actually), but my birthday IS this month, and it IS a big deal.  I think I get so excited about it because its at the very very end, so I anticipate it all month.  In reality, I never do anything that great for my birthday, but this year, I am most likely heading down to Baltimore/DC (again, not very exciting), but I am also going to be leaving for Hawaii again less than a week after!  And when I come back, I'll be bringing my husband with me.  Not bad, right?  

Anyway, I know that March technically started yesterday, but this is the first day of the week, so its the first important day.  And for me, March started out with a snow day.  This was kind of upsetting.  First, I only have two weeks left at the school I am student teaching at, and I just lost a day.  Second, I was supposed to be observed today, and I was up late last night actually writing a lesson plan.  

The day off had its perks though.  First, I didn't do any of my work for class tonight, so I got that all done.  Second, my supervisor can come tomorrow, so I didn't make up the fancy lesson plan for naught.  Third, at least since its a Monday, it was a scheduled day off from the gym.  Fourth, I got to actually cook some food.  So much that I can't even fit it in one post.  

Vegan Green "Eggs" and...Oats


I went into the fridge this morning, and all I could find was a broccoli.  Okay, I like broccoli, but I REALLY wanted some tofu scramble.  I could just use broccoli and onions I guess.  But then, I found green onions.  Then, I found a half a green pepper.  Then, I decided I'd throw in some of this really beautiful chard that I bought...oh...two weeks ago? (Debbie Meyers Green Bags are a lifesaver)  Add that to 1/4 block of tofu, make it sweet and spicy, and you've got one good green breakfast.  

I had some chocolate oats with strawberries on the side.  It was just some soymilk, cocoa powder, and butter toffee flavored stevia.  Good way to start off the day off.

Now, I know I said I was going on a baking hiatus, but Celine knocked me back to my senses.  I don't think anything makes me happier than a creatively healthy baked good.  Enter her Chickpea Blondies that she posted about this weekend.  


Baking with beans is just the best idea ever.  I've made cookies with lentils, and I'm sure that many of you have tried black bean brownies (I have not...and I'm not sure why), but since I had never had a blondie before, ever, I had to try them immediately. 

I made two changes, I used seedless blackberry jam, and I used protein powder instead of flour (its only two tablespoons, it doesn't make a big difference).  

She says they serve 8, but mine wanted to be cut into 12.

 Its the kind of day where you have more than one dessert (because I said so), so I made some Pumpkin & Banana Protein Ice Cream.  


Protein powder, frozen pumpkin, frozen bananas, coconut oil, pumpkin pie spice, some carob chips and soymilk.  Pretty similar to my usual method, except I used way more frozen fruit/pumpkin this time, so I used more soymilk.  This was way more than I was anticipating, and was pretty filling too.  It should be, oil, protein, fruit, whew. 

More food love tomorrow (or the next day, or whenever I get another free hour)!

Muffin Beginnings

Hey hey people!  

First, I want to tell you about, first is some of the bars I've tried recently.  The picture may look familiar because I posted about them a few days ago, when I was having the Perfect Day.


So, the Bumble Bar.  I had the Luscious Lemon variety, which was about 210 calories and 6g of protein.  Respectable.  Unfortunately, I wasn't a big fan.  They look really yummy, you can see all the seeds and whatnot, but I really wasn't a fan of all the sesame seeds.  I've heard that some of the other varieties are better, but I probably wouldn't buy this again.  

Second, the Orange Jocolat bar.  I thought this was heinous.  I know that is pretty strong, but I was super disappointed because I love the regular Jocolat bar.  It tasted like alcohol to me, and not in a god way.  That's really the only way I can describe it.  I thought maybe it was a bad one, but unfortunately I had bought two.  The second one was just as bad.  It almost tasted to me like there was vodka in it or something.  I don't know if this sounds silly, maybe someone can chime in and tell me whether or not I am crazy.  

I spent some time shopping today, for student teaching stuff.  I really don't like shopping when I have sort of specific things that I need.  Like, work appropriate...blah, not fun.  I also went to see Bride Wars, which I thought would be better.  If you saw the preview, you pretty much saw the movie.  I was also annoyed by Candace Bergen's commentary.  Not recommended, and I like silly girly movies. 

We did find this new "treat", I guess you could say, at a stand near the food court.  They're called Kim's Magic Pop, and they are delicious.  Everyone agreed that they have a taste similar to toasted marshmallows.  It is faint, but its there, and it makes them awesome.  


Has anyone tried these before?  They're only 15 calories apiece, and are apparently a popular Korean snack, although they're made in Jersey.   

My dinner was super boring.  I had BBQ tofu with roasted asparagus and butternut squash fries.  Ready for bland looking picture time?  

Gosh, I swear it tastes better than that picture looks.

Okay, last but not least, I set off, yesterday, to put the carob chips that I recently received, to good use.  I ate some...of course they're good like that.  But I wanted to do something special with them.  I made muffins!  The first batch, I think I mentioned, were inedible, because I used the gluten free AP flour.  I can't stand it.  I tried again today and for now, they're good.  I can think of some stuff that I should have added though, so I will post the recipe after I try them again.

The Perfect Day

Welcome to a walk through my perfect day...which is exactly what today was.  

First, you'll wake up to the radio, like always, but Jack Johnson will be playing and it will instantly put you in an excellent mood.  

Second, even though you should really get up and have breakfast, you are going to lay in bed for an hour and finish Eclipse.  

You'll finally get up and have whatever your favorite current breakfast is.  For me is was the Apple Pie Quinoa and Tempeh Bacon Hash (with spinach, for greenery), that I posted about a few days ago.  I wasn't kidding about eating the same thing for weeks!  

All the equipment you need at the gym will be free when you need it.  A girl you went to high school with who you now look better than will be chugging away on the treadmill, then lift some girly weights, and you will smugly smile to yourself (hey, I'm not perfect, its just my perfect day).  

Then, you will set off to discover heaven.  Well, at least if your idea of heaven is fantastic natural bulk food/grocery store.  A few weeks ago, my mom pulled a flyer for this place out of the paper, and I finally got myself there.  It was a bit of a drive, but worth it, completely.  Oh and on your way to this mecca, your iPod will gleefully pump out all the Jack Johnson songs you have, even though its batteries should be running out any second.  

While you are visiting heaven (also known as Nature's Pantry), your husband, who you haven't talked to in a week, will call, and...well honestly, he'll kind of distract you from reading nutrition labels and whatnot, but you're really happy he called.  

Lots of fun stuff will be acquired at Nature's Pantry:  

From the bulk food section, low-sugar pineapple rings, carob covered raisins, and wheat free fig bars!  (Not pictured is also nutritional yeast and oat groats)

With another giveaway in mind (because they're fun!), you'll pick up two bags of Soyfree, a coffee substitution made from soy, in Chai and Almond Amaretto.  Don't forget to sign for my current giveaway in the meantime!:

Other pantry foods will be picked up, some single serving packets of almond butter, wakame flakes, miso ramen noodles, Corn Thins, a Bumble Bar (which are vegan, even though they have a bee on them.  I never would have even picked them up, except I saw them on Erica's blog yesterday), and a chocolate orange Jocolat bar:

You've been looking for vegan hair gel or mousse on the internet for a week or so.  You've been using up all the leftovers in the house, waiting until you find something, because ordering hair gel online seems like a hassle.  You find Giovanni hair gel here!  It comes with a shampoo sample too!  Because it is the perfect day, you'll also pick up some bubble bath, because you've been using shower gel in the bathtub for the past month:  

While you are at the store, you might start to think that maybe this isn't the perfect day after all...because this store ALSO doesn't sell vegan carob chips.  Huh??  However, when you get home, you will chide yourself for thinking this was not the perfect day.  That is because you will immediately see a package on the table, and you will know what it is instantly!  

Orange County NY, you may want to keep vegan carob chips away from me, but the lovely Heather (of Heather eats Almond Butter) has thwarted you!!  I mentioned on her blog last week that they were no where to be found, and she had some in the mail the next day.  She also surprised me with this chocolately Raw Organic Food Bar!!  It looks awesome, full of good stuff.  When I try it, I will post my review.  Honestly, I also ripped into it immediately, but I was able to practice some self control (because one doesn't overeat to the point where they feel sick on the perfect day). 

After you relax for a little, you'll get started on dinner.  Its another day for recipe testing!!  Today I made the Vegetable Crisp.  It had eggplant, peppers, tomatoes, etc.

This was yummy!  To go with it, you'll try something else from V'con, like the Tomato-Rice Soup with Roasted Garlic and Navy Beans.  

Serves 5 (made a half-recipe)
Nutrition Information:  174.2 Calories;  2.4g Total Fat;  0.3g Saturated Fat;  0.0mg Cholesterol;  34.4g Carbohydrates;  6.6g Fiber;  6.6g Protein

While you are cooking, you will make a gigantic mess (something about dropping a baking sheet with food on it...oops), but you totally won't get upset because the Jack Johnson emanating from your laptop keeps you chill.  

Sadly, your perfect day is coming to a close.  After dinner, you'll start on your blog while you watch 'How I Met Your Mother'.  Then, your mentor teacher will call and set up you coming in later this week (which you are equally terrified and excited for).

Lastly, I mean, the perfect day couldn't end dessert-less!  Come on, seriously, you guys must know me a little better than that.  
  
Yes, that's right, Carob Peppermint ice cream.  Fruit sweetened too, so that makes it..kind of...sort of...good for you, right?   

Edited to add:  Then your mom will give you a coupon for Puffins!  

So, perfect day, no?  Relaxed, good food, awesome gym session, packages from blogger friend, food store discovery.  Yes, definitely my idea of perfect.   

If you haven't noticed, Jack Johnson is most definitely my go-to relaxing music.  What kind of music chills you out?
