Corn Fritters - Day One Gluten Free

Today is my first day attempting to be gluten free.  I'm also avoiding added sugars, but that isn't as difficult (for me) as gluten free.  Anyway, I've been reading "Quantum Wellness" and the gluten free, sugar free, animal free, alcohol free, caffeine free "cleanse" is one of the recommendations.  I am aiming for one week, the suggestion is three.  We'll see how it goes.        

So, I don't know if anyone else does this, but my family celebrates New Year's Day.  One of our staples is corn fritters.  My mom has been making them for years, everyone goes crazy for them, and they are totally not vegan.  So, while flipping through my copy of Vegan With A Vengeance today, I was excited to stop at the Fresh Corn Fritter recipe (but my corn was canned).  Then, I made them!

To make them gluten free, I substituted the all purpose flour with chickpea flour, and as far as I know, they came out just as delicious!  I also used agave instead of maple syrup.  They were nice slightly spicy from the jalapeno, plus nice and colorful from both the peppers, and a little tiny bit sweet.  I did not fry them.  I just cooked them in a griddle pan coated with cooking spray.  It probably took a good 5 minutes on the first side before I could flip them without them falling apart.  
The pictures is terrible.  I think I'm about done worrying about how the pictures come out, it seems futile.  But they were quite quite tasty!

I split the recipe in half, so the nutrition information is for a half recipe.  I'll be eating the other half during my late-night class tomorrow.

The vegetables on the side are broccoli, kale, and carrots tossed in some red wine vinegar, which is my new obsession.  

If anyone has some great gluten free recipes or suggestions, I would loooove to hear them!!  Also feel free to call me out if anything is not gluten free, its just because I don't know any better, and I want to know better!

  1. I keep seeing that recipe and wanting to make it! It looks as delicious as it sounds =) I think I will make them now that I know it can be done without frying.

  2. yum to corn fritters! unfortunately, i don't have any intentionally gluten-free recipes to try... but maybe i'll be inspiried to try a few.

  3. hey gina!! i started eliminating gluten a few weeks ago. i think you'll definitely notice a difference in your... umm... bodily functions. haha making recipes gluten free can be such a pain in the butt. i'm glad this one worked out for you. it looks scrumptious!

  7. Good luck with going gluten free. It has definitely made a difference for me. You might want to buy some of Bob's Red Mill GF Baking Mix. You can sub it for regular flour in just about everything.

  9. Thanks everyone!! On the one hand I am hoping I notice a difference because...well it is just kind of cool to be more aware of your body like that. On the other hand....I really love seitan, haha. So we'll see how it turns out!!

  10. Oh man, I was reading the list of all the things you've taken out of your diet, and I was thinking "This girl is going to starve herself"...

    Good luck with all of that! I mean jeeezuuus. Its a good thing you like to cook, because eating at non-specialty restaurants must be a pain and a half.

  11. Thanks for the comment Kyle! I already didn't eat animal products or caffeine, so that wasn't an issue. I don't drink a lot, either. So it was mainly the sugar and the gluten, and I honestly find the gluten restriction more restricting than anything!! It definitely is a restrictive diet, but it is only meant to be a "cleanse", I'm not going to be eating like this from other. And as I hope you can see from the posts after this, I am definitely not starving!!
